Whole 30 & Paleo Friendly Menemen

A Turkish Breakfast Dish made of eggs, peppers, and tomatoes.

Servings 2 (depending on amount of eggs you add)

Ingredients
  

  • 1 TSP Ghee
  • 1/2 Onion Sliced
  • 3 Sweet or Bell Peppers Seeded and Sliced
  • 1 Can of Diced Tomatoes
  • 3 oz Tomato Paste
  • 3 basil leaves Chopped
  • 2 TSP Salt
  • 2 TSP Sumac
  • 1/4 TSP Red Chili Flakes
  • 1/2 TSP Ground Black Pepper
  • 2-4 eggs Depending on how many servings you need

Instructions
 

  • In a Medium cast iron pan heat your ghee over medium high and sauté the onion, peppers and basil until the onion is translucent (about five minutes). Sprinkle in some of your seasoning, and add tomatoes and tomato paste. Simmer together for about 5 minutes and add remaining seasonings and herbs. Adjust taste as needed.
  • Make little burrows in your sauce and crack eggs into the pan. Cover and cook for 3-4 minutes for a runny yolk (5-7 for more well done), serve, and enjoy!
