Place chicken breasts in a pot and cover with water. Bring to a boil until chicken is cooked. Remove chicken and shred well.
In a deep pan, heat some oil over medium high heat ( you want the oil to cover the bottom of the pan). Add in the salt and stir until the salt is dissolved in the oil--this will make sure your chicken is evenly seasoned.
Add chicken into the pot with all other ingredients and stir until evenly coated. Allow to crisp over medium high heat for about 20 minutes. Checking at 5 minute intervals to flip and crisp evenly. For the absolute best crisp, do NOT over stir.
Once the chicken is crisped to your desired limit (is that even a thing?), remove from heat and serve. Enjoy on tacos, bowls, burritos, and more!
